LIP #293: Test Kitchen Thursday

The first Thursday of every month, Chef Dani will teach LIP to show how to cook delicious, gut-healthy foods to upgrade your health and wellbeing.

Dani’s “Sweet” Protein Bar

Ingredients to taste:

almond butter or peanut butter (3x big spoonful)

chia seeds

chocolate chips (60-65% cacao, dark chocolate)

fresh dates (peel, deseed)

sliced almonds

sesame seeds

Flax seeds (sprinkle)

Pumpkin seeds (sprinkle)

Pinch of sea salt

oatmeal (instant/quick) (4-5x as the other dry ingredients)

drizzle maple syrup

drizzle olive oil

Drop in a mixer & mix for a few minutes until incorporated

Spread out on parchment paper

Shape it-- mix with hands into little balls OR can roll it out btw parchment paper, cut to desired shape

Put in the fridge or if want to prep fast-- put in freezer for an hour initially, then store in the fridge

Serving size ~3 balls bites, 20-30g of protein

Lasts 60 days in fridge

If you want to explore and experiment with your own flavors —follow this structure of thirds:

1/3 Grains (oats, puffed rice, quinoa flakes…)

1/3 Smoothing Agent (nut butters, coconut oil…)

1/3 Dry Ingredients (think crunch, nuts, seeds, chocolate…)
