Fig carpaccio

4 pieces of figs

Olive oil

Basil leaves or flowers

Parmesan cheese

Prosciutto or jamon

Toasted sliced almonds

Maldon salt

Balsamic

Directions

Cut stem and bottom of the figs off, roughly peel the skin, slice the figs and set them in a plate in a circular shape, with the help of a plastic sheet rub it with olive oil press the figs to make it thinner. Drizzle with olive oil, add salt to taste Shave some cheese, slice some ham or prosciutto Add basil leaves and balsamic Enjoy !

Red bell pepper

Zucchini

Onions

Cherry tomato

Eggplant

Olive oil

Directions

Cut all the ingredients into squares(inch by inch), drizzle a sauté pan with oil and cook on low heat for 15 mins, salt and Enjoy !

Tomato Carpaccio

1 green tomato

1 red tomato

A few cherry tomatoes

Olive oil

Basil leaves or flower

Maldon salt

Toasted Sliced Almonds

Balsamic

Parmesan

Prosciutto

Directions

Slice the green and red tomatoes, cut the cherry tomatoes in half, place all the tomatoes in a circular shape on a plate, drizzle with olive oil, drizzle with balsamic, sprinkle the toasted slice almonds, and sprinkle some basil leaves or flower petals, shave parmesan and place on top along with some prosciutto

~4oz cooked chickpeas (1 can), rinse

1.5oz tahini

2 small garlic cloves

1 tsp salt

Juice from 1 lemon

2oz olive oil

Paprika garnish, drizzle with olive oil

Pair with—

Mini cucumbers

Red/Yellow/Orange Bell peppers

Dark chocolate

Couple of nuts

Variations

Can swap chickpeas with black beans, pinto beans, edamame

Guacamole:

1 avocado, cubed

Juice from 1 lime

Sprinkle of salt

Drizzle of olive oil

Handful of Purple onion or shallot, small diced

Sprinkle of very small diced Jalapeno (as small as you can)

Bunch of cilantro, chopped

"Test Kitchen Thursdays" (formerly known as Fermentation Friday). The first Thursday of every month, Chef Dani will teach LIP to show how to cook delicious, gut-healthy foods to upgrade your health and wellbeing. This Thursday we'll be making bone broth. It tastes amazing and is great for your digestion, and has lots of nutrients that may also help joints, immunity, skin, sleep and more.
Here's what you'll need, and the recipe: (Ingredients for 10 portions)
1 lb chicken bones (carcass) (sold at whole foods but if you need to substitute, you can use any cut of chicken with bones)
2 lb veal short ribs bone in (sold at whole foods but if you need to substitute, you can use any cut of beef with bones)
2 lb ox tail
1 head of celery root
1 lb Idaho potatoes
1 lb carrots
2 leeks
½ bunch of parsley
½ bunch of cilantro
1 branch of rosemary
2 spoons of olive oil
Salt Water 8 quarts
Use your biggest soup pot. Preparation:
1-Cut all the vegetables except leeks in mirepoix (diced half-inch size)
2-Cut the leeks lengthwise in halves and thinly slices
3-Roast the chicken bones and beef bones in the oven at 350 degrees F for 10 minutes
4-In a soup pot, cook the vegetables with olive oil, starting with the leeks on low, then after 10 minutes add the rest of the vegetables, cook for 5 more minutes, and then add the meat and the bones and pour in the water. Let it simmer for 2 hours, then add the herbs and seasoning, cover it and simmer with lid on for 30 more minutes.

More and more science is being exposed on the link between gut health and brain health. The gut is often called a "second brain" because it produces many of the same neurotransmitters as the brain does, including serotonin, dopamine, and gamma-aminobutyric acid, all of which play a key role in regulating mood and are a part of a thriving microbiome.

More and more science is being exposed on the link between gut health and brain health. The gut is often called a "second brain" because it produces many of the same neurotransmitters as the brain does, including serotonin, dopamine, and gamma-aminobutyric acid, all of which play a key role in regulating mood and are a part of a thriving microbiome.

One of the best ways to promote a healthy microbiome is to regularly add fermented foods into your diet. Fermentation is also easy and safe to do at home with simple direction—this series will help get you set up with the basics of fermentation and the skills to build it into your weekly routine.

About this Class
Leadership in Practice 15 of N: What’s the Cost of our Imbalances?
Leadership in Practice, taught by Next Jump's Co-CEOs Meghan Messenger and Charlie Kim, is a comprehensive class designed to equip leaders with the essential skills needed to navigate the ever-changing landscape of work and become the difference-makers in their organizations. This series focuses on the importance of effective decision-making in uncertainty, a critical skill for 21st-century leaders, exploring changes and trends in the market, while also covering other trending topics that drive human performance, such as self-awareness, teaming, emotional intelligence, mood, nutrition, and more. Through insightful presentations and thought-provoking discussions, attendees learn to adapt and thrive in the face of emerging challenges in the modern workplace and unlearn old habits that no longer serve them.

Meghan Messenger, Co-CEO of Next Jump.  Meghan started as a door to door sales intern for Next Jump in 1998 and now serves as the Co-CEO. She credits her success to the consistent practice of leading with authenticity. We are what we practice, however the #1 thing we practice is LHF (“lying/hiding/faking”), managing other people's impressions of us, trying to look good.
